What That Cream Line Means & Why We Love Seeing It

If you have ever opened a bottle of Mistyglen Creamery milk and noticed a creamy layer sitting at the top, you may have wondered what it is and why it’s there. The good news is, it’s supposed to be there. In fact, we love seeing that cream rise to the top because it is one of the signs that our milk is non-homogenized.

Most milk you find in grocery stores has been homogenized. Homogenization is a process that breaks down cream particles and forces them to stay evenly mixed throughout the milk. This gives the milk a uniform look from top to bottom, but it also means you do not see that natural cream line.

At Mistyglen Creamery, we skip that extra step. Our milk is non-homogenized, which means the cream is left in its natural state. Since cream is lighter than the rest of the milk, it naturally rises to the top of the bottle over time. That is the layer you see when you open it.

This is also why our bottles say to shake first. Giving the bottle a good shake mixes the cream back into the milk so every glass is smooth, rich, and full of flavour. Some customers like to shake it every time, while others enjoy pouring a little cream off the top for coffee, cereal, or a special treat. There really is no wrong way to enjoy it.

It is also important to know that cream at the top does not mean the milk is unsafe or spoiled. It simply means the milk has not been homogenized. Our milk is still pasteurized using a low-temperature vat pasteurizer to meet Canadian safety standards while helping protect the fresh farm flavour our customers enjoy.
