Why Fewer Steps Help Our Milk Stay Fresh, Creamy & Full of Flavour

When people first try Mistyglen Creamery milk, we often hear the same thing: “This tastes different.” Some say it tastes richer, some say it reminds them of milk they had growing up, and others simply notice that it feels more like real milk. A big reason for that difference is how little we do to it.

At Mistyglen Creamery, our milk is minimally processed. That means we keep the process as simple as we can while still meeting all Canadian food safety standards. One of these differences is the travel time and distance. Our milk travels much less than grocery store milk as it is processed right on our farm. Our milk stays much closer to home, contributing to a more natural, farm fresh taste.

When preparing the milk, we skip the separation. In many large-scale systems, milk is separated into cream and skim milk, then blended back together to reach specific fat percentages. At Mistyglen, we keep things more straightforward. Our milk stays closer to how it comes from the cow, which helps preserve the rich, fresh flavour our customers enjoy.

We also do not homogenize our milk. Homogenization is the process that breaks down the cream particles and forces them to stay evenly mixed throughout the milk. That is why most grocery store milk looks the same from top to bottom. With Mistyglen milk, the cream naturally rises to the top because we leave it the way it wants to be. Just give the bottle a shake before pouring, or enjoy a little cream off the top in your coffee or cereal.

Our pasteurization process also looks different at Mistyglen Creamery. Large processors use high-temperature systems that heat milk rapidly, enabling them to process large volumes efficiently. At Mistyglen, we use a vat pasteurizer, which allows us to use a lower temperature and a slower, gentler process. This meets food safety standards while helping preserve more of the natural farm fresh flavour.

All of these choices add up. No extra separation. No homogenizing. Less travel. Gentle low-temperature pasteurization. Small batch processing. Milk from our own cows. We haven’t even mentioned the nostalgia of bottling the milk in glass bottles!
